After a busy day, I want to make something fast and easy for dinner but also something that’s packed with flavour! This Chinese Lemon Chicken is the perfect dish…
To make this dish you will need
- 125ml lemon juice
- 2 chicken stock cubes
- 40ml cornflour
- 50ml honey
- 40ml brown sugar
- 5ml ground ginger
- 375ml water
- 6 Irvine’s chicken breasts
Mix the first 7 ingredients together in a pot, and bring to the boil, stirring. Simmer for 5 to 6 minutes till smooth and thickened. Keep this sauce warm.
Slice the chicken breasts into strips and toss in seasoned flour to coat. Heat oil in a large heavy based frying pan, and shallow fry the chicken in batches for 3 to 4 minutes. Do not fry all the chicken at once, this will lower the temperature of the oil. Drain the chicken on paper towel as you go. Once all the chicken is cooked, add it to the sauce and toss to coat the chicken strips.
Serve with rice of your choice; I like brown rice as a healthier option, and sprinkle the sticky chicken strips with toasted sesame seeds.
